These Orange Cranberry Muffins are bursting with tart cranberry and tangy orange flavor. They are perfect for the holiday season.

There are just certain flavor combos that are made for each other. Personally, when I think about the holiday season the first flavor that comes to mind is orange and cranberry. I love the combo of tart cranberries and slightly sweet oranges. I love orange cranberry sauce at Thanksgiving but these Orange Cranberry Muffins are something that can be enjoyed all year round.

This easy recipe is perfect for a quick holiday morning treat. These muffins freeze well so they are also great for a quick grab and go snack any time of the year.

Some flavor combos are made for each other…chocolate & PB, apple & cinnamon, orange & cranberry.

Let’s Talk Ingredients for Orange Cranberry Muffins

For this recipe, you want your oranges fresh and your cranberries are frozen.

  • Oranges There are a lot of different types of oranges and each has its own flavor and sweetness. While it is definitely a personal choice I recommend good old fashion Navel oranges. The peak season for Navel oranges is October to February which makes them the perfect orange for a holiday bake. Since they are also seedless and are sweeter than Valencia they are ideal for these cranberry muffins
  • Cranberries – On my travel bucket list is a visit to New England in the fall to experience the fall foliage and to visit a cranberry bog. What can I say, I love cranberries. Their season is September to November which is why they are traditionally a part of Thanksgiving dinner. But for this recipe frozen is the way to go since they will be easier to mix in and are less likely to turn the muffins a pretty shade of cranberry red. If you prefer fresh cranberries toss them lightly in flour prior to folding them into the muffin mix which will help prevent them from sinking to the bottom of the muffins.
  • Orange Extract – Extracts are the perfect way to add a punch of flavor without adding liquid to your recipe. A good extract will not have an artificial taste. For this recipe, I opted to add 1 teaspoon of orange extract to increase the orange flavor and counterbalance the tartness of the cranberries. This is a personal preference and the recipe will be great without it. Do not substitute additional orange juice for orange extract. The additional liquid from the orange juice will produce uneven muffins. Opt for additional orange zest to increase the orange flavor if. you don’t have orange extract.

Are you ready for Orange Cranberry Muffins? Save your self some cleanup and use muffin liners. Or you can use parchment paper. Cut your parchment paper into 4-5 inch squares, place each piece over the holes of the muffin tin, and then use the bottom of a glass to mold the parchment into the tin.

Pro-tip: If your oven is like mine it can cook unevenly. I not only rotate my pan but I will also rotate my muffins if I see one side is browning faster.

Ingredients
  

Muffins

  • 2 cups flour
  • 2 tbsp baking powder
  • 1 tsp salt
  • ½ cup milk
  • ½ cup orange juice, freshly squeezed
  • 2 large eggs
  • ½ cup light brown sugar
  • ¼ cup white sugar
  • 4 tbsp unsalted butter, melted and cooled
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp orange extract, optional
  • 2 cups cranberries, frozen
  • zest of ½ orange

Orange Streusel Topping (Optional)

  • ¼ cup sugar
  • zest of ½ orange

Orange Glaze (Optional)

  • 1 cup powder sugar
  • 2 tbsp orange juice, freshly squeezed

Instructions
 

Muffins

  • Preheat oven to 350° F.
  • Line a standard 12 cup muffin pan with paper liners.
  • In a large bowl whisk together flour, baking powder, and salt.
  • In a separate bowl whisk together milk, orange juice, eggs, sugar, butter, oil, vanilla extract, and optional orange extract.
  • Add the milk mixture to the flour mixture and mix together until dry ingredients are moistened.
  • Fold in frozen cranberries and orange zest until combined without over mixing.
  • Using an ice cream scoop fill the muffin pan with the batter.

  • Optional: sprinkle with orange streusel topping (see below for instructions)
  • Bake for 20 minutes or until tops are golden brown, rotating halfway between the bake.

Orange Streusel Topping (Optional)

  • Stir the sugar and orange zest together in a small bowl until combined; set aside until ready to top muffins.

Orange Glaze (Optional)

  • Stir powder sugar and freshly squeezed orange juice.
  • Spread glaze over cooled muffins.

Notes

These muffins are great without any topping or pick your topping – Orange Streusel or Orange Glaze.  
To prevent fresh cranberries from sinking to the bottom of your muffins, toss them lightly in flour prior to folding them into the muffin mix.
Do not substitute additional orange juice for orange extract as the additional liquid from the orange juice will produce uneven muffins. You can additional orange zest instead of orange extract.
