Quick & Easy Breakfast Tostadas

Life gets busy so I love easy meals that utilize leftovers which is why I love these quick and easy breakfast tostadas. They are super easy to make using store-bought tostadas and your favorite refried beans. I used leftover borracho beans from the night before to make my refried beans. Top the tostadas with a fried (or scrambled) egg and then pile on the fixings. Breakfast is served.

These breakfast tostadas loaded with seasoned refried beans, a sunny side up egg, and your favorite, tasty toppings make for a quick & easy breakfast.

  • guacamole or sliced avocado
  • shredded lettuce or cabbage
  • bell peppers or onions

Let’s Get Cooking

Are you ready to make some breakfast tostadas? These are super simple to make and great for a quick weekday breakfast or a great option for weekend brunch.

Pro-tip: Don’t skip the first step. Heating the tostada shells in the oven for a few minutes is going to make them less likely to crack while you are eating them.
