Quick and easy recipe for breakfast tostadss that are perfect for a quick breakfast or as a dish to your next brunch menu

Life gets busy so I love easy meals that utilize leftovers which is why I love these quick and easy breakfast tostadas. They are super easy to make using store-bought tostadas and your favorite refried beans.

I used leftover borracho beans from the night before to make my refried beans. Top the tostadas with a fried (or scrambled) egg and then pile on the fixings. Breakfast is served.

These breakfast tostadas loaded with seasoned refried beans, a sunny side up egg, and your favorite, tasty toppings make for a quick & easy breakfast.

Let’s Talk Breakfast Tostada Toppings

Toppings are a quick and easy way to take a simple dish like these breakfast tostadas to the next level. These tostadas are also great for brunch since everyone can customize their tostadas with their favorite toppings. Here are a few of my favorites.

  • sliced jalapeños or peppers
  • chopped cilantro
  • shredded cheese
  • roasted corn salsa
  • roasted tomatillo salsa
  • pickled red onion
  • guacamole or sliced avocado
  • shredded lettuce or cabbage
  • bell peppers or onions
  • sausage or bacon

Are you ready to make some breakfast tostadas? These are super simple to make and great for a quick weekday breakfast or a great option for weekend brunch.

Pro-tip: Don’t skip the first step. Heating the tostada shells in the oven for a few minutes is going to make them less likely to crack while you are eating them.

  • 4 large eggs
  • 4 crispy tostadas
  • 1 cup refried beans
  • salt and peper to taste

Topping Options

  • shreded cheese
  • bacon or sausage
  • fresh cilantro
  • sliced jalepenos
  • sliced avocado or guacamole
  • tomatillo salsa
  • roasted corn salsa
  • shredded lettuce or cabbage
  • pickled red onion


  • Preheat oven to 350° F.
  • Spread tostada shells out on a baking sheet in a single layer and bake for about 4 minutes just enough to get them warm.
  • While your tostadas are warming up heat your refried beans and prepare your toppings.
  • Fry (or scramble) your eggs and season with salt and pepper to taste.
  • Spread a layer of refried beans on each tostada, top with your eggs, and pile on your favorite toppings.
